Homemade Microwave Caramel Dip

Today’s Scrumptious Sunday post comes from the Amazing Mama’s Girls.  If you aren’t following them yet, you are missing out!

Enjoy this delish recipe!

For some this might seem a little bit “out of season”, but for me, caramel and apples never go out of season. I started making this caramel dip when I learned to make homemade caramels in the microwave (with only 5 ingredients). I am hooked on this recipe because it is so versatile. I use it for candy making, desserts, popcorn, on ice cream, on apples for snacks, you name it. I have even tried flavoring it. I love that in 10 minutes, you can have fresh caramel ready to go.

So here is. Drumroll please… the recipe for:

Homemade Microwave Caramel Dip {or topping}

  • 5 T. Butter (sliced into 1 T. squares for quick even distribution)
  • 1/2 c. White Sugar
  • 1/2 c. Brown Sugar
  • 1/2 c. Corn Syrup
  • 1/2 c. Sweetened Condensed Milk

Instructions:

Place all ingredients into a microwave safe bowl, I use Pyrex. Note* It will get pretty bubbly so use as large of a bowl that will fit in your microwave and don’t double the recipe because it will bubble over. (Not that I know from experience or anything, right? :/ )

Microwave on high for 3-7 minutes. Stir every 45-60 seconds. I say 3-7 because depending on how you want to use this caramel, the consistency that you want may change. 3 Minutes will give you a good drizzle, while a full 7 minutes is a perfect, wrap and- bite into- caramel.

caramel ice bath test

You don’t have to be a caramel expert to figure out the consistency and time, you can just spoon some into an ice bath, causing a rapid cooling effect, and test what the caramel will feel like once you have cooled the batch.

If you have gone a little too long, and it got more firm that you wanted it to be, just add a little cream and warm it until you are able to stir it in. That will make it thinner, and pourable even.
