This is seriously THE BEST Sweet Potato Casserole you will ever taste! The recipe is AMAZING! Put these on your menu for Christmas dinner for sure!
Once again, my lovely Mother-In-Law Dianne W. was kind enough to share her tips and tricks to making this Scrumptious Sunday recipe. Thank you, Dianne!
Ingredients:
Filling
3 cups mashed sweet potatoes*
2 eggs, beaten
1/2 cup milk
1 Tbls vanilla
1 cup sugar**
1/2 tsp salt
1/3 stick butter, melted
Topping
1/3 stick butter, softened
1 cup brown sugar
1/3 cup flour
Directions:
- Preheat oven to 350 degrees.
- In a large bowl, place sweet potatoes, eggs, milk, vanilla, sugar, salt and melted butter. Stir to combine and pour into an 8″ square baking dish (spray pan with nonstick coating for easy clean up).
- In a small bowl, combine softened butter, brown sugar and flour. Combine with pastry cutter (or just work thoroughly with your fingers) until well combined. Sprinkle over potato mixture.
- Bake at 350 degree oven 35 – 45 minutes or until set. Let rest 15 minutes before serving.
*You can use canned sweet potatoes, drained and then mashed, but I have found that if I roast my own sweet potatoes ahead of time and then let them cool, mash and then use them in the casserole it sets up better and has a much better flavor.
** You can easily cut back on the sugar by 1/3 or more and still have a good casserole.
